Bhaja Masala is a blend of roasted spices used in various Bengali dishes.
Cumin seeds - 2 teaspoon
Coriander seeds - 2 teaspoon
Fennel seeds (saunf) - 2 teaspoon
Cloves - 24 pieces
Green Cardamom - 12 pods
Cinnamon stick - 2 inch piece
Bay leaf - 1
Dry red chilli - 4
Dry roast all the spices, cool and grind into a coarse powder. Store in an airtight jar.

There are a lot of versions of the Bhaja masala and this one is the one which my mom prefers to make as it includes the garam masala ingredients too.
The other version which she uses is without garam masala and fennel seeds.
For this you need 2 teaspoon of cumin seeds, 2 teaspoon of coriander seeds and 2 dry red chillies. Dry roast all ingredients and grind into a coarse powder.
