Begun Bhaja

Begun Bhaja....Begun is the Bengali name for Egg plant or Brinjal and Bhaja in Bengali means these are shallow fried Brinjals.
Begun Bhaja is one of the most common accompaniment to any Bengali Meal be it simple day to day meal or a lavish spread.....its everywhere, and is relished by all.
Traditionally Begun Bhaja is just slices of Brinjal or Egg Plant coated in turmeric and salt shallow fried, but I have add some chilli powder to make it a bit spicy.


Begun or Egg Plant - 1 medium size
Turmeric powder - 1/2 teaspoon
Red chilli powder - 1/2 teaspoon
Salt to taste
Mustard Oil - 2-3 tablespoon (for frying)


Wash and cut the begun into approximately half inch thick slices. Soak them immidetely in water as they start getting black very soon.

Remove the begun from water and pat dry them with a kitchen towel, sprinkle some red chilli powder, turmeric powder and some salt, (you cold also put a few drops of mustard oil) Rub the spices so that it coats the begun well, repeat the same for the other side too.

Heat oil in a heavy bottom frying pan, place the begun slices and fry for 2-3 minutes and then flip and fry the other side for 2-3 minutes. Remove with a slotted spoon and drain on absorbent paper to get rid of any excess oil.

Serve hot with Dal Rice or Khichuri.
